Hello, everyone! Today I am here to share the recipe of, quite possibly, the world’s best vegan banana chocolate chip muffin recipe. I promise you, they’re THAT good. I’m going to take you step by step of how I make the muffins, however if you are in the fast lane, the ingredients and recipe steps will be listed down below. I found this recipe about two years ago, and I have been making these as often as possible ever since! Buckle your seat belts because vegan or not, you’re going to LOVE these muffins!
The first step is to preheat your oven to 350 degrees Fahrenheit, not going to lie, I had to look up how the heck to spell that word. Next, grab some bananas; any ripe bananas are good, but I prefer when mine look like this.
They are just easier to mash and taste amazing. Mash them up with a fork until they look like this.
After your mash your bananas, add 1/2 cup brown sugar, 1/4 cup vegetable oil, 2 tsp. pure vanilla extract, and 1/4 cup almond milk. Whisk these together until you get a soupy texture and all of the brown sugar has dissolved.
Next you’re going to add in 2 cups of flour. I add the flour in 1/2 cup at a time to make it easier to mix together. If you want your muffins a little bit more ooey gooey and not quite as dense, I would suggest 1 1/2 cups of flour. You’ll also add in 1 tsp. baking soda, 1/2 tsp. salt, and, my favorite, 1 tsp. cinnamon. Stir this all together until all of the flour has been mixed. Trust me, nothing is worse than biting into a muffin and getting a big ol’ chunk of unmixed flour. Your mixture at this point should look something like this.
Now comes the fun part. I hope you’re sitting down for what I’m about to tell you because this will rock your world. The chocolate chips from Enjoy Life are vegan and YOU CAN’T TELL THE DIFFERENCE. I know, it’s mind blowing. One of my biggest struggles as I move forward with being vegan is losing my chocolate, but I don’t have to because Enjoy Life has saved the day.
I add in about a cup of chocolate chips, but I’m not here to tell you how to run your life, you add as much chocolate as you please. Once you have your chocolate chips all mixed in, scoop the mixture into a lined muffin tin. This recipe usually makes about 15 muffins.
Let these bad boys sit in the oven for 16-18 minutes and ENJOY. These muffins are my favorite thing to bake, especially at the end of the week when my bananas are turning brown.
I seriously spent 30 minutes taking pictures of muffins for this blog post, so you bet your bottom dollar that I’m putting them all in. C’mon, look how yummy these look!
This is what I meant earlier, when I said they were dense muffins. If you’d like them more gooey and airy, just slim down how much flour you add.
I hope you all make these muffins and love them as much as I do. My favorite part about this recipe is that no animal had to give any part of itself for my treat. Animals are friends not food! Expect some more delicious vegan recipes from me in the future. Have a wonderful week and go make these muffins!
